Elderberry Syrup

¾ c. dried elderberries

3 c. water

1 Tbsp. dried ginger root

1 tsp. cinnamon

1 c. raw honey

Directions:

  1. In a medium saucepan, add elderberries, water, ginger, and cinnamon. (Do not add honey!)
  2. Bring to a boil, then cover and reduce to a simmer for about 45 min to an hour until the liquid has reduced by about half.
  3. Remove from heat and let cool to warm.
  4. Pour through a fine mesh strainer into a one quart bowl and mash berries with the back of a spoon to squeeze out all that goodness!
  5. Add honey and stir well.
  6. Pour into a canning jar.
  7. Refrigerate.

Standard dose:
kids: ½ – 1 tsp.
adults: 1 Tbsp.

For cold or flu:

Take the standard dose every 2-3 hours until
symptoms disappear.

Tea:
Boil 2 Tbsp. elderberries in 16 oz. water for 15 minutes. Or put 1 Tbsp. of syrup into a mug and add hot water.
